Manggu cassava is one of the superior varieties from Sukabumi of the 10 varieties that have been released by the Nut and Tuber Crops Research Institute (BALITKABI) until 2011. Of the 10 superior varieties, 4 are intended as cassava for consumption because the taste of the tubers is delicious and has a low starch content of around 20-30%, while the other 6 varieties are for industry because the taste tends to be bitter and has a high starch content of 30-45%.



Manggu cassava has high productivity because without care alone it can produce 3 kg of tubers per plant stem. With intensive cultivation techniques, Manggu cassava can produce a minimum of 10 kg per plant stem or 100 tons per ha with a population of 10,000 plants. Tubers can be harvested 8-10 months after planting and have a high starch content of 27-35% (average 32%) so they have potential as ingredients for cassava chips, tapioca flour and mocaf flour (a substitute for wheat).



The development of cassava as a raw material for bioethanol became a concern for the Indonesian government when world crude oil prices soared in 2008. Unfortunately, efforts to develop cassava-based bioethanol stopped as world crude oil prices continued to decline. According to the Director of Cultivation of Various Nuts and Tubers, Ministry of Agriculture, Ir. Rahman Pinem, MM, the use of cassava is still focused as an alternative food source. In 2010, the popularity of cassava was boosted by the development of the cassava slice industry in Trenggalek, East Java. The craftsmen produce the processed product to supply the modified cassava flour (mocaf) industry.



Mocaf is processed by using lactic acid bacteria to "damage" the starch granules from the cell walls of cassava tubers. In this way, the cell structure of the characteristics of cassava processed into flour changes. Through fermentation for 8 hours, a drying and flouring process, cassava flour is obtained which is easily soluble. The taste becomes neutral, the smell and taste of cassava disappear up to 70%.
