Cloves can be identified by their dark brown color, slightly oily surface, strong, sweet, and spicy aroma, and distinctive shape (similar to a small nail or tack with a bulbous head). To check for quality, look for cloves that are uniform in size and shape, and avoid those that are dull, brittle, or have brown spots. A water test can also be used to differentiate between pure and adulterated cloves, where pure cloves will settle at the bottom of a glass of water while adulterated ones may float.
