As the name implies, palm sugar is a sweetener produced from the processing of palm tree sap (Borassus flabellifera Lin). Sugar produced from palm trees is often referred to as sugar with the highest caste produced from various types of palm trees. This is because the glycemic level of palm sugar is very low compared to sugar in general. The highest glycemic level of palm sugar is 54.48, which means the glycemic level of palm sugar is in the low category so that this sugar is safe for consumption for diabetics.
