Gourmet, grade A vanilla. This vanilla is relatively oilier and more flexible. On the outside of the vanilla you can see the vanillin crystals which melt when heated. ‘A’ (6-7 inches ) per pound (7.5 per oz). water content 30% – 35%.



Grade ‘B’ dried vanilla beans are less flexible and less attractive and do not contain ‘B’ crystals (6-7 inches) per pound (10 per oz). With a water content of 15% – 25%.
