Cloves (Syzygium aromaticum, syn. Eugenia aromaticum), are aromatic dried flower stalks in the family Myrtaceae. They are native to Indonesia, and are commonly used as a spice in spicy dishes in Europe, and as main ingredient in Indonesian kretek cigarettes. Cloves are mainly available in Indonesia and become famous spices in Aceh.



Clove (Syzygium aromaticum) is widely used for both cooking and herbal medicine. Cloves have been known since the third century BC, cloves were used to refresh our  breath by chewing them during Han Dynasty. Cloves were widely traded, especially by Muslim sailors in the Middle East during the middle Ages.



In modern times, cloves are firstly discovered in Maluku and according history, the 350 – 400 years oldest clove was found in Ternate. Afterwards, they have been grown throughout the world during the colonial Ages where the Dutch colonialists distributed cloves to various countries in the world.



Cloves flourish in loamy and fertile soil in tropical climates with high humidity, such as Indonesia. A climate with cooler air and average rainfall is considered as ideal condition to increase flower production.  Cloves also flourish on land with annual rainfall between 150-300 mm and can be planted at 1500 altitude above sea level.



Clove trees will produce flower in the fourth year after planting. The period of producing flowers is various, between September-October, and between December-January at high altitudes land. Harvest time of flower petals is occurred when the condition is roundly shaped and unopened petals and before the color changes into pink. The process must be done without damaging the tree branches, because it can affect the clove tree fertility. The weight of dried clove flower is about one-third of fresh flower.



Cloves are excellent source of manganese. Manganese is an important mineral for the body because it can activate several enzymes, especially arginase which helps producing of urea. Manganese also creates enzyme peptides which is responsible for protein hydrolysis in intestine. This mineral help lipid metabolism (reducing fats) and keep the neuron system stable by reducing irritability. Cloves also become a source of other nutrients such as vitamin K, dietary fiber, iron, magnesium and calcium. In addition, cloves also contain an active substance, eugenol which functions are anti-inflammatory, anti-bacterial and other benefits.
