Palm sugar is a natural sugar made from the sap of the enau tree and has several characteristics, namely:

Palm sugar is made by:



Male flowers of the sugar palm tree are collected in bamboo baskets.



Laru or kawao is added as a natural preservative to prevent the sap from spoiling.



Nira is boiled on a stove in a large pan



Palm sugar is formed when the nira becomes concentrated, heavy when stirred, and breaks up when poured again



The dough is removed from the stove and molded 



 



The dimensions of the molded palm sugar can vary, for example:

Palm sugar is sugar derived from the palm tree or enau, which is molded into a semi-circular shape. Palm sugar has a softer texture and tends to be thicker than palm sugar, but brighter than Java sugar. 



 



Palm sugar has a sugar content of around 78%, as well as vitamins, antioxidants, fiber, and minerals. These ingredients make palm sugar have a lower glycemic index than granulated sugar.
