Brown sugar is made from the juice or sap of palm or coconut plant stems. This brown sugar is more suitable for use as a sweetener in cooking, for example as a mixture of rujak seasoning, cuko pempek, and added to chili sauce so that it doesn't taste too spicy. This sugar has a dark brown color that tends to black. The taste of palm sugar is sweeter and the aroma is stronger than brown sugar or Javanese sugar. The texture of palm sugar is also thicker than brown sugar which is more liquid. Therefore, palm sugar is preferred for making kinca in cakes or traditional iced drinks, such as marrow porridge and ice dawet. Recently, palm sugar has become popular as an ingredient in brown sugar boba drinks or palm sugar milk iced coffee.
